Amy, I truly love your type A, perfectionist tendencies surging in your quest to pass this class....you have learned so much, no one would ever ask if you have a diploma to prove you are a true boulangère! Certainly you are the best one I know! Perhaps....we do a piping class next - but no exams! Curious - was the temp at which yeast dies on the written exam? Praying for no braiding on your final...I tried learning Challah braiding on my trip to Israel, and it was hideous.

I LOVE that Chagall ceiling!! And the pics of the lovely Russian ensembles - there may be a gorgeous fur or two I've seen you wear in the past. Can't wait to have lunch when you return! Sending lots of love!

If you really want to know--yeast dies at 0 degrees and 50 degrees Celsius. It has to be in the middle of those two or it won't work. More on the braiding later...

Amy- the adrenaline spike I had just thinking about your looming grade. It looks like you might be headed for a C the most difficult grade to achieve. Anyone can get an A if all they do is study and learn everything even if it is not on the test. A grade of B, I have always considered a failure because obviously an A was the goal. However a C requires anticipation, strategy and finesse which you are famous for. I am rooting for a C. The most important thing is that you are the most glamorous culinary student in Paris. Good Luck!
